For a conscious consumption of raw mountain milk cheeses

Milk is white. Pure white, like the clouds in the sky. Freshly milked in mastela, a tin bucket, in a cup for breakfast, in the cheese on a charcuterie board. It always seems the same, but every sip of milk has a different, unique taste. It hides secret ingredients, such as grass, water, petals, the dawn, the sun.  

Walk up to one of the alpine farmsteads in Trentino in the summer. He will show you his butter, his ricotta, his cheese. And his cows.  


Remember that raw mountain milk and its products are strongly discouraged:

  • for children under 10 years of age
  • for people with a developing or weakened immune system
  • for vulnerable individuals, pregnant women and the elderly
