Milk

Precious, fragrant gifts from this white gold

‘'Behind every cheese is a different green pasture under a different sky.'
- Italo Calvino -

Milk is white. Pure white, like the clouds in the sky. Freshly milked in mastela, a tin bucket, in a cup for breakfast, in the cheese on a charcuterie board. It always seems the same, but every sip of milk has a different, unique taste. It hides secret ingredients, such as grass, water, petals, the dawn, the sun.

The herder knows this well.

Walk up to one of the alpine farmsteads in Trentino in the summer. He will show you his butter, his ricotta, his cheese. And his cows.
