Immersive and sensory experiences dedicated to the cheese production chain of Primiero in the stunning setting of Palazzo Scopoli.
Target Audience: An evening designed for everyone, offering a unique opportunity for cheese enthusiasts, gastronauts, and those who want to experience a series of immersive experiences that tell stories of milk, smell of hay, and taste deliciousness.
Overview: A unique and original event created to honor the centuries-old connection between Primiero and the dairy industry, a fundamental aspect of our mountain culture at the foot of the magnificent Pale di San Martino. The Dì del Formai joins the Gran Festa del Desmontegar, representing a chain based on tradition. It is dedicated to those who love Primiero’s dairy excellence and want to explore it in depth, savoring every nuance of flavor and aroma, accompanied by evocative sounds. It will be an opportunity to taste our cheeses in a new way, through experiences that engage all the senses, in the beautiful setting of Palazzo Scopoli.
Program
- EXPERIENCE TO BE LIVED: from 4:00 PM to 7:00 PM (departures every 40 minutes, last tour at 6:00 PM) | duration approx. 40 min. + 40 min. | Groups of up to 12 people.
CASEIFONIA: A fusion of sound and flavor, a tribute to our emotions. Let your senses guide you to experience our dairy chain in depth. You will be accompanied by an Onaf expert in the most intimate and private space within the Palazzo, where you will find a relaxation oasis. The lights will be dimmed so that sight does not interfere with your emotions, and in these moments, you will be accompanied by refined sounds and the taste of selected cheeses. Acoustic and olfactory sensations that your mind will blend, merging sweetness and saltiness with melodies, solos, major or minor tones. Finally, by sharing your thoughts, we will write the story titled: "Caseifonia."
CHEESE “À LA CARTE”: Afterwards, create your customized tasting, guided by an expert. A tasting of local cheeses accompanied by a glass of Trentino wine, where you will create your favorite pairing. Whether you are a lover of fresh or aged cheeses or adventurous gastronauts seeking new flavors, our cheese menu will guide you in your choice. Alongside you, an expert from the Primiero dairy will reveal all the secrets behind our dairy excellence. In the evocative 1600s wooden stube, the tasting will take place in a convivial atmosphere, allowing you to chat with fellow cheese lovers.
- CHILDREN'S EXPERIENCE: from 4:00 PM to 7:00 PM | approx. 60 min. per group | Max. 12 children per group aged 4 and up (up to 5 years accompanied by parents)
STEP BY STEP INTO THE WHITE WORLD OF MILK: A practical workshop for children dedicated to the world of milk. A journey of legends, stories, and… tastings, which will introduce our little friends to the world of milk and its derivatives step by step. The workshop will be an opportunity to discover the milk cycle and how its transformation leads to various products on our tables. In the first part of the activity, among anecdotes and stories, there will be tasting moments that will showcase each participant's culinary skills, put into practice in the subsequent preparation of a tasty milk-based snack!

APERICHEESE: At EL VÒLT FORMAGGERIA DI PRIMIERO, via Valserena 36 c/o ex Birreria di Siror, an exclusive evening with live music, where you can enjoy "cheesechetti," tantalizing Dolomite appetizers made from cheese and other local gastronomic excellences, accompanied by a cocktail, a local beer, or a Trentino wine. Come visit us at El Vòlt - Formaggeria di Primiero, perhaps after experiencing the sensory delights of the Dì del Formai at Palazzo Scopoli, to savor Primiero cheeses in a gourmet style, in an informal evening celebrating the Desmontegada.
Tickets:
“Experience to be Lived” (recommended for ages 12 and up): €15.00, includes the Caseifonia experience and the Cheese “À la Carte” tasting.
“Children’s Experience” (ages 4 to 11): €12.00, includes participation in the workshop + snack.
“Apericheese”: €19.00, includes 6 “cheesechetti” appetizers based on cheese and/or local products + 1 alcoholic or non-alcoholic aperitif.
