The Dolzan family preserves the knowledge of the ancient distilling art of Trentino, the historic home of grappa.
The tour will begin by tracing the history of the family, distillers for six generations, then moving on to the distillery, in operation or off depending on the time of year, where you will be explained what grappa is, the traditional Trentino method and the particular "de Varda" artisanal method. The most exciting moment will then be the descent into the barrel cellar, where we will talk about aging and aging techniques, and in the "Cose di Casa" family museum, a unique space that houses more than 1600 ancient tools used over the years by the Dolzan family. The whole experience will be accompanied by an itinerant tasting of 5 grappa, with a particular focus on the aromas and organoleptic characteristics of great value of this product.
