A seventeenth-century mill in the historic heart of Cavalese.
Once an essential element to provide food and therefore survival for the people in the "Magnifica Comunità", now a prestigious and renowned restaurant exalting the roots of its own history, even the gastronomic ones. The chef and owner Alessandro Gimozzi managed to skillfully reconcile tradition and modernity with instinct, experience and imagination; that's how his special creations come about, put together in three menus: "classic", "modern" and "essences". If we can fly with our imagination as we catch the characteristic kitchen smells, we may also wonder about unusual dishes such as the raw deer meat with sea-urchin flesh, Bronte pistachios and thistle oil, or the buckwheat fagottini filled with polenta concia (made with cheese and butter) and sauté penny buns ... Cheese, cakes, crème brûlée and a large wine cellar (800 wines) complete and creatively enrich the menus to best pamper the customer.
