Here in Zambana, we have dedicated an entire festival to enjoying it in every possible way! Whether in risotto or barley risotto, served with egg sauce or gorgonzola, or shaved over a carpaccio of carne salada, its delicate flavor enhances every dish.
During these days, we organize field visits to show you how we cultivate and harvest it, along with show cooking events and tastings to teach you how to prepare it and pair it with local wines.
